Thank You's

So I was laying in bed reading and I was think of how I wanted something sweet but we had no yummy treats in the house. Bummed out I ignored my craving. Anna woke up and wanted a bottle so I went downstairs to make her one and sitting on the counter was this:
Joy had dropped off this box of my favorite cupcakes. Sprinkles red velvet! I don't know what I did to deserve this but I'm sure glad I did something nice. These cupcakes are so appreciated and came at the PERFECT time. Thanks Joy for being such a thoughtful friend. OK Really the packaging is so cute. Where do you come up with this stuff???

Another Blogging Friend

Weekend in Seattle with our college roommate Lisa.
Yeah it's official. Hillery started her blog. It's so exciting to add my favorite friends to our blog list. I know I talk to Hillery everyday, sometimes 10 times a day. Now I check out what's she's up to 24/7. Just a little back round. Hillery and I have been best friends since high school. OK I take that back...we've didn't really like each other in high school because we were competing for the same best friend, Buffy. Well when Buffy left us high and dry after high school and moved to Utah then well we only had each other. And here we are lot's of years later, bestest friends! Blogging together. Hey, I wonder if Buffy has a blog?????

Yeah! Another Blogger


Well it's official, Joy has finally entered the CLUB! That's the blog club. Check out her blog the header is SUPER cute and she's sure to post really cute things and plenty of funny stories.

Not another OBSESSION!

That's right, I'm OBSESSED again. While up blog-stalking I came across this site and stayed up way too late drooling over all the pictures. I think I must have gained 10lbs. in one night. The pictures just make me want to cook and bake. Oh the mess I will make and the pounds I will gain, all in the name of food. I love this site! TasteSpotting! It truly is an addiction. Page after page of mouthwatering pictures and recipes for the taking. AAHHHH too much good food!

Visalia

Went down to Visalia on Friday for Rachel and Dave's graduation. Other than the 112 degree weather, we had fun visiting with family.
Congratulations to Rachel for recieving her Bachelor's and Dave his Master's. These are the jars I made for them with their favorite treats. They LOVED them.

It was so so so HOT the cousins spent the morning swimming. Luke had an absolute blast. He loved being in the water. I was surprised that Anna enjoyed being in the pool. Usually she doesn't want to be wet.
This is a little side note. When Chris and I were fist married the Evan's family had a family reunion during Thanksgiving. For this particular family reunion every family was asked to make something to auction off in an auction. The money made from the auction was going to be used to fund the next reunion. Well, Gary was kind enough to bid on my cross stitch and it's still up in the guest room at Gary and Marena's. This was the first domestic thing that I ever did. It really means alot to me that they have kept it all these years. Thank You!

Pop Up Pancakes


These are so easy and a must try. They don't taste like your traditional pancake but they are yummy.

* 1 cup milk
* 1 cup flour
* 6 eggs
* 1/4 cup melted butter
* dash salt


Preheat oven to 400 degrees.




Blend all ingredients in a blender. This makes the batter really smooth. Grease your muffin tins (I used butter) before pouring the batter in. Bake them for about 15 minutes, or until puffy and golden brown on top. Pull them out of the oven and pop them out of the pan. Use a knife or spatula if they are being difficult.


Now they are ready to serve with you favorite toppings. How about some syrup, butter, powdered sugar and strawberries. The possibilities are endless!

It's boating season.

like FATHER, like SON


yeah! We are so excited summer is here. What makes boating season even better this year? Well we were able to get a boat slip on the lake. That means no more driving to the boat storage to pick up the boat then backing it into the lake, going and parking the car and trailer then running to get on the boat that everyone has been waiting on and baking in the hot sun for at least 20 minutes. Now we park the car, walk down to the boat, take off the boat cover and off we go! It's so easy. Our first trip out was with Andrew, Aaron, Chase, Mom, Mike, Chris and I and the kids. Luke wasn't too sure about his life vest at first. Anna just kept saying "can we go home now." She is so funny, I swear the only thing that get her excited is her princess movies. The only thing she does like to do on the boat is hold up the flag. Guess what she doesn't even like the water. Go figure it took me almost the entire afternoon to convince her to put her feet in. Only until she had to go potty did she brave the water and then it was only to go potty and she was out!

Mother's Day Treat

I found these fun little flowers on Martha Stewart and just had to make them. They were originally shown on top of a cupcake but I attached mine to chocolate covered oreos. They turned out so cute! My mom, gramma, aunt lupe, aunt lily and aunt charo LOVED them. I'm so glad they loved the treats because I LOVE them!


Here are the instructions:
Find a design you want to use or draw it by hand for a more whimsical feel.Place the drawing on a cookie sheet and cover with wax paper. Tape it down flat so it doesn't move. Use one unmelted yellow candy melt for each flower center.Melt the white candy coating and use a plastic bottle (shown) or ziploc bag with the corner cut out to pipe the outline of your shape. Place in the freezer for a couple of minutes until hardened. Remove.Fill in the shapes with a second color. It shouldn't be too hot. Return to freezer to harden. Remove and flip over to reveal the flat side to display on your cupcakes. Easy!

Cooking Light

So if there is one magazine I LOVE, it's Cooking Light. It's the only magazine that i receieve in monthly. When it comes in the mail I set it aside and when everyone is asleep I lay in bed and look through each recipe and imediatly make my menu for the week. I usually find a few recipes that intrigue me and want to try. But in this months magazine there was a article titled 'Build a smater salad'. As I looked through the recipes I was so exited to try some of them. I don't think Chris appreciated haveing salad 5 nights in a row. Here are my favorites. Enjoy



This salad is so cool and refreshing. I really liked all the textures and the 'crunchiness'.

Sesame Shrimp Salad

More adventurous greens, such as napa cabbage and watercress, add crunch. Shrimp boosts levels of lean, low–saturated-fat protein and omega-3s, while sesame seeds offer the minerals iron, magnesium, and zinc.


Ingredients
1 tablespoon sugar
3 tablespoons fresh lime juice, divided
1 tablespoon water
1 garlic clove, minced
2 teaspoons chili garlic sauce (such as Lee Kum Kee), divided
1 1/2 teaspoons fish sauce
1/2 teaspoon salt, divided
1 tablespoon orange marmalade
2 teaspoons dark sesame oil, divided
24 large shrimp, peeled and deveined (about 1 pound)
5 cups shredded napa (Chinese) cabbage
1 1/2 cups trimmed watercress leaves
1 1/2 cups shredded carrot
1/3 cup chopped fresh cilantro
1/3 cup chopped fresh mint
2 tablespoons toasted sesame seeds

Preparation
1. Combine sugar, 2 tablespoons juice, 1 tablespoon water, and garlic in a small microwave-safe bowl; cover with plastic wrap. Microwave at HIGH 40 seconds or until sugar dissolves. Cool. Stir in 1 teaspoon chili garlic sauce, fish sauce, and 1/4 teaspoon salt.
2. Combine remaining 1 tablespoon juice, remaining 1 teaspoon chili garlic sauce, remaining 1/4 teaspoon salt, marmalade, and 1 teaspoon oil in a large bowl, stirring with a whisk. Add shrimp to bowl; toss to coat. Marinate shrimp in refrigerator 15 minutes, tossing occasionally. Remove shrimp from bowl, reserving marinade. Thread 3 shrimp onto each of 8 (8-inch) wooden skewers.
3. Heat remaining 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add shrimp skewers and reserved marinade to pan; cook 3 1/2 minutes or until shrimp is done and glazed, turning once.
4. Combine cabbage and remaining ingredients in a large bowl. Drizzle fish sauce mixture over cabbage mixture; toss well to coat. Arrange 2 cups cabbage mixture onto each of 4 plates; top each serving with 2 skewers.
Yield
4 servings


The best part of this salad is the simplicity of the dressing. So easy and so yummy!

Summer's Best Garden Salad
Ingredients
3 tablespoons fresh lime juice
2 teaspoons honey
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 teaspoons extravirgin olive oil
4 cups shredded romaine lettuce
1 cup yellow pear tomatoes, halved
1 cup chopped peeled cucumber
1/2 cup finely chopped orange bell pepper
1/2 cup thinly sliced radishes
2 tablespoons chopped fresh chives
1 small yellow squash, halved lengthwise and thinly sliced (about 1 cup)
1/2 cup chopped avocado

Preparation
1. Combine first 5 ingredients in a small bowl. Gradually add oil, stirring with a whisk.
2. Combine lettuce and the next 6 ingredients (through squash) in a large bowl. Drizzle dressing over lettuce mixture, and toss gently to coat. Top with avocado.
Yield
6 servings (serving size: about 1 cup salad and 4 teaspoons avocado)


Southwest Salmon Caesar
Caesar salad is a popular starter or side. Adding grilled salmon elevates it to a main dish rich in beneficial omega-3 fatty acids.

Ingredients

Dressing:
1/4 cup fat-free mayonnaise
1/4 cup (1 ounce) grated fresh Parmesan cheese
2 tablespoons fat-free buttermilk
2 tablespoons fresh lemon juice
1 tablespoon water
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Dijon mustard
2 garlic cloves, minced
2 canned anchovy fillets, drained and chopped
Salad:
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon Spanish smoked paprika
Dash of ground red pepper
4 (6-ounce) salmon fillets, skinned
Cooking spray
8 cups torn romaine lettuce
1 cup fresh corn kernels
1 cup garlic-flavored croutons

Preparation
1. To prepare dressing, combine first 9 ingredients in a mini chopper or blender; pulse until well blended. Cover and chill 1 hour.
2. To prepare salad, combine salt, paprikas, and red pepper; sprinkle evenly over top of fish.
3. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add fish, spiced side down, to pan; cook 4 minutes or until browned. Carefully turn fish over, and cook for 4 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
4. Combine lettuce, corn, and croutons in a large bowl. Drizzle dressing over lettuce mixture; toss gently to coat. Arrange 2 cups salad on each of 4 plates; top each serving with 1 fillet.
Yield
4 servings

why talk, just blog

Is this my future??????? What kind of example am I setting? Next I'll be telling Chris "Oh hunny just read the blog to see what's going on in my life." Or maybe it's Anna and Lukie who will be telling us to read their blog for up to date information on their lives. I saw this on a blog and just started laughing out loud. Do my family and friends think this of me???? Do they think I think 'no time to talk, I'm blogging' Well I do love to blog...it's my life highlights confined to the Internet for the whole world to see. That's comforting right? Really I don't think the whole world is interested. Just my favorite family and friends are the diligent readers. Thanks for the support. Love you guys so much!

Family Weekend

On Thursday David, Natalie and Peter drove from Utah to stay with us for a few days. Mostly Chris and David have been working on their website and the kids and I have been hanging out. They arrived around 2am on Thursday morning and because Lukie had a doctor's appointment the kids and I were out the door by 8:30am. First stop doctor's office where we found out Lukie had an ear infection. Poor baby that would explain the sleepless nights and daytime whinining. Then we went over to Sutter Street grill in old Folsom for breakfast. If you like a good hearty breakfast and you are in the area you have to try it. The 'must' orders are the homemade cinimon roll french toast and biscuts and gravy. After breakfast we headed over to Ross. Marshal's and Old Navy so Natalie could do some summer shopping. After shopping we went home to put Lukie down for a nap. The kids watched a movie and I worked on Chatterbox Design orders. For dinner we went to Jack's and Peach Pit for fro-yo. Both were a big hit with David and the kids. When we got home the kids spent the next couple of hours playing. I have never seen Anna have so much fun playing with someone else. She and Peter were so funny together. Peter is three years older that her so for the most part I think he just humured her but it was so fun to watch her interact with Peter. As I easeddroped here are some of the things I overheard:


Anna: Your majesty please stop jumping.

A: You be prince charming.

A:I left my glass slipper on the stairs.

A: Peterson lets go play in my room.

Peter: My name is not Peterson, it's Peter.

A: OK Peterson let's go play.
P: OK Annason!

A: My names not Annason, it's Anna Kate Ebans. (She can't pronounce the V in Evans)
A: I be Cinderella princess and you be Prince Charming OK Peterson.

It was all to funny. Especially how she insits on calling Peter, Peterson. I keep telling her it's Peter but she keeps calling him Peterson. Late night but the kids were having so much fun.

On Saturday I had Chatterbox and so Chris, David and the kids went back to Sutter Street Grill for breakfast then over to the lake to check out the boat. While Chris and David worked the kids and I made a cake for Chris for his birthday. Anna was so excited about putting the sprinkles on. She couldn't wait to show her daddy the cake. I did tell her it was a surprise so she had to wait to tell him at dinner. As soon as dinner was ready she ran upstairs and kept telling Chris "happy birthday" and that she had something to show him. After dinner we sang Happy Birthday and had cake.


We had such so much fun spending time with David and the kids. We hope they come back soon and bring the rest of the family!

Grateful for my fingers

I thought my little business was pretty safe. Until today. It was right before our May Chatterbox Designs workshop and I had one more piece of wood to cut. I thought I could get it done really quick, hop in the car and head over to Joy's. So in my effort to hurry I almost sliced my finger of with the table saw. It was all because I was in a hurry and over confident. Looking back I should have asked Chris for help or not tried to rush what I was doing. I've cut plenty of wood before and never had a problem but today I was just in a hurry and not totally focused on what I was doing. At the moment it happened I was in shock. The piece of wood slipped and my finger went strait towards the blade. It was only seconds, if that. I pulled my finger away and ran in the house. I didn't even scream. I guess I didn't want to panic anyone because I really didn't know how bad it was. I ran my finger under the water and realized that I had just grazed the skin. In my efforts to not be late I rapped it in a paper towel and went over to Joy's. It started throbbing as soon as I cleaned it up and put some gauze around it. I haven't really thought much about it until now. I have to say I'm having a bit of anxiety about it. It's finally hit me that I could be fingerless. I could have sliced off my finger today. I was that close. Not even close, it was more than a close call. My finger actually touched the blade. I am so LUCKY and BLESSED that I only had a few layers of skin sawed off. This is one of those moments I know that I am being watched over. That my heavenly father knew that all I needed was a warning to remind me to be focused and careful in all that I do. To remind me to be grateful for my fingers and everything else he had given me. I can only imagine the things that I am sometime not careful with. For instance, leaving Lukie on the changing table while I run and get wipes, not locking the cabinets with cleaning solutions even though I know Lukie can open them, leaving the scissors out where I know Anna can reach them, letting Luke play with the forks at the dinner table just so he will keep quite ( he could poke his eye out), leaving the iron on the unstable ironing board. There are so many other careless things that I do. I just needed this reminder to be more focused. I am so grateful for my fingers and I am grateful to have them to type with.

Laundry Room


I am so excited to post this picture. I have small vinyl business and I'm always busy with parties and orders. With that being said, the main reason for starting Chatterbox Designs with my friend Joy was to have a vinyl machine for our own use. Well I never get around to doing anything for myself or my home. Well I finally finished a project for our laundry room and I LOVE, LOVE, LOVE the way it turned out! I have a few more projects in the works...can't wait to share.
